Cannoli

December 14, 2011 5:28pm

Cannoli are extremely delicious pastry desserts which originated in Sicily and are an essential part of Sicilian cuisine. The singular is ‘cannolo’ in Italian, or ‘cannolu’ in Sicilian, both meaning “little tube”. In Italy, the pastries are commonly referred to as “cannoli siciliani”, meaning “Sicilian cannoli”. Cannoli are basically tube-shaped shell of fried pastry which are filled with a sweet creamy filling that usually contains ricotta. Cannoli come in a variety of sizes, some no bigger finger and others being fist-sized in proportion. The larger ones are usually found in Palermo, the capital of Sicily.

Cannoli were historically prepared as a treat during the Carnival season. Cannoli are often associated with fertility and one legend posits that they originated in the harem of Caltanissetta. The American variation of cannoli usually uses a simple custard filling as opposed to ricotta. As an indication of just how popular cannoli are, in the 1972 film The Godfather there is a famous scene in which Peter Clemenza says to Rocco who has just killed Paulie in the car: “Leave the gun. Take the cannoli”. In The Godfather Part III of the 1990s, Connie Corleone uses poisoned cannoli to kill Don Altobello.
